Here is a delicious and easy recipe I made to disguise, what was rapidly becoming, a thoroughly boring dinner. It’s a gorgeous, quick-to-make sauce hijacked from Gwyneth Paltrow’s new cookbook “It’s all Good”.

Anchovy and rosemary are a flavour marriage made in heaven. Sometimes I knife a leg of lamb and stuff it with the two for a deliciously fragrant and salty edge.

This sauce takes under 10 minutes to make and adds instant chutzpah to your average steak. Maximum effect for minimum effort. Just what the stressed out Modern Mother requires. Enjoy.

Melted anchovies & rosemary

(Adapted from It’s All Good)

Ingredients

ΒΌ cup of extra virgin olive oil

Coarse sea salt

Freshly ground black pepper

8 good-quality anchovies

Leaves from a leafy sprig of rosemary – very finely chopped

Method

Heat the olive oil in a small skillet over medium heat.

Add the anchovies and cook, stirring with a spoon, until they dissolve into the oil.

Add the rosemary and cook for just 1 minute to let it bloom and lose its woody edge.

Pour over steak with abandon and serve with greens and a BIG bottle of red. Cheers!
